Beef with Broccoli

Beef with Broccoli

Ingredients:& j" X1 C9 L  _. @5 ^
3/4 lb (375 g) lean beef, sliced thinly into bite-sized pieces
8 Z% U& I: }% t# q7 R6 N1 K. P- M! E) u4 y
Marinade for Beef:
, q9 x. L4 G$ a. o1 egg ; f4 L2 t; Z0 J# B: o
1/3 tsp (1.5 mL) salt
7 u2 o: Z$ b/ c; p2 K1 Tbsp (15 mL) cooking wine
  i; T# A3 K% ^! {1 Tbsp (15 mL) cornstarch

  J7 s* ~, ]! F+ [+ T: C; Z1 1/2 lb (750 g) broccoli, flowerets removed, slice on the diagonal into thin slices
% `/ l6 l* E4 k7 P" |4 V1 cup (250 mL) cooking oil: i4 c" h" e' O) H/ a7 m
2 1/2 Tbsp (30 mL) oyster sauce( Z4 g/ q9 f% P- a% ^6 @% j: N
2 Tbsp (25 mL) light soy sauce9 K8 b6 z$ k+ s% N# E3 u4 r) H
3/4 Tbsp (10 mL) dark soy sauce
7 @) D; k% _1 K, X. I1 Tbsp (15 mL) sugar
- Y0 y" C- q  }) s) b9 A! s7 ba few drops of sesame oil  @; m. @& Q3 B. m7 ~4 x1 k
2 cloves garlic, crushed
! r) P7 s, d& }; `$ e' L8 {; ]1/2 cup (125 mL) chicken broth1 q3 w9 x/ T  e/ f( m
2 Tbsp cornstarch (if desired)

Slice beef and mix together marinade ingredients. Add marinade to beef and marinate for thirty minutes. Add 1 1/2 tablespoons of oil to beef, mix in thoroughly, and marinate beef for another thirty minutes. While beef is marinating, prepare the vegetables. ) R9 `) a  [5 t6 q/ z/ N: q& ]3 S
Heat wok and add 1 cup of oil. When oil is ready, add beef and stir-fry until it is nearly cooked. Remove beef and set aside on a plate. Drain the wok and wipe clean with a paper towel.
0 y' k2 c/ ?: C; L3 X( `# `Add 1/2 cup water to wok. Bring the water to a boil and add the broccoli. Cover and cook until broccoli is cooked through. Drain the wok.  ) P& b/ m$ A# ^; _
Heat wok and add oil (about 2 tablespoons). Add the garlic and stir-fry for about 1 minute. Add vegetables and beef and mix together. Make a well in the middle of the wok and add the sauce ingredients. Add cornstarch, stirring to thicken. Mix sauce together with other ingredients.  Serve hot.1 P' e& X; D/ f3 H

Variations
8 \3 |( e4 Z$ {: N* Y*Add carrots and onion if desired. Boil in the wok with the broccoli (you'll need to add more water).
