* 2 big halibut steaks
( Z0 R8 t+ v# }- W& M! z * 2 tbsp olive oil
: I, |. n& t- M * 1 tbsp butter
6 V$ m9 E' q4 N: J6 e) O * 2 cups sliced chanterelle mushrooms8 F8 X1 @/ w- L, d
* 1/3 cup diced roasted red pepper
) u0 y- _/ I0 s- m8 o4 p" [8 p( C% ~; y * 1 cup fresh corn kernels

2 x$ O+ b. E" }( K, G* [Step 1 5 X6 Z7 w6 C* Q+ r
Slice the chanterelle mushrooms into nice big and thick slices. Add 2 tbsp olive oil in a saute pan over medium heat. Add the mushroom slices and a pinch of salt in the pan. Give it a stir. Cook for 10 minutes or until the mushroom slices are lightly browned.

Step 2
8 H4 B/ Z8 F) b+ b. w+ D0 }* _: PAdd 1 cup fresh corn kernels,
4 l; L9 g9 n% Zand 1/3 cup diced roasted red pepper or 1/2 red bell pepper, and 1/2 cup water in the pan. Bring it to a simmer, and simmer for 5 minutes. Add 1 tbsp butter and the juice of 1 lemon. Give it a mix. Turn the heat to low. 0 i7 l B2 ?( [. D
Step 3 ) \( R9 G i: k; d. s$ @* F6 l% D
Season the 2 big halibut steaks with salt and pepper. Grill for 4 minutes per side.

Transfer the mushroom and corn mixture to a serving plate. Spoon over the sauce. Add 1 tbsp minced fresh tarragon.
