Beef with Broccoli

Beef with Broccoli. `6 u' Z5 S/ d0 O
Serves 3 to 4

' B' j1 O, B  m! h0 n- @  K3/4 lb (375 g) lean beef, sliced thinly into bite-sized pieces

' w1 M0 B0 \$ g: l6 AMarinade for Beef:
( j" [; Y( y: }, U! }2 @# o" I1 o1 egg
) x; n1 f" O& k  l+ O1/3 tsp (1.5 mL) salt; G$ i3 K2 A& L4 i+ ?
1 Tbsp (15 mL) cooking wine
& M+ o9 Y# [: e1 Tbsp (15 mL) cornstarch2 @" M* W( r( O, m6 a
2 Tbsp water/ a( N1 d) X' d8 j' T+ g6 B$ ^1 c" h
/ `& K! Q5 G& @- D& @
1 1/2 Tbsp (20 mL) oil) ]7 L* ?! h) s' I4 ]* Q  z+ s- C

8 g- f/ g0 J- n1 1/2 lb (750 g) broccoli, flowerets removed, slice on the diagonal into thin slices
, G8 @  p: j6 O8 n; b1 cup (250 mL) cooking oil4 ]& L7 c6 r0 V* ~0 @! P
2 1/2 Tbsp (30 mL) oyster sauce
, i2 q3 Y! ]0 U4 \2 Tbsp (25 mL) light soy sauce
" J, h- r9 d2 l& r. }3/4 Tbsp (10 mL) dark soy sauce/ O  h8 W4 W! B- @; _
1 Tbsp (15 mL) sugar) `2 x- e) [0 M9 q! i! n, Q
a few drops of sesame oil- `, y/ n3 V2 o: _
2 cloves garlic, crushed
$ e; }6 U$ I& b1 O6 T) U1/2 cup (125 mL) chicken broth& ?: e! P; u2 i- G
2 Tbsp cornstarch (if desired)

Directions:9 ~- _: j4 ^% W
Slice beef and mix together marinade ingredients. Add marinade to beef and marinate for thirty minutes. Add 1 1/2 tablespoons of oil to beef, mix in thoroughly, and marinate beef for another thirty minutes. While beef is marinating, prepare the vegetables. ) N5 E8 G8 D  o3 ]
Heat wok and add 1 cup of oil. When oil is ready, add beef and stir-fry until it is nearly cooked. Remove beef and set aside on a plate. Drain the wok and wipe clean with a paper towel.
9 s! Y6 p& R7 K$ {Add 1/2 cup water to wok. Bring the water to a boil and add the broccoli. Cover and cook until broccoli is cooked through. Drain the wok.  
" y  `, f! m" S0 C  s8 ZHeat wok and add oil (about 2 tablespoons). Add the garlic and stir-fry for about 1 minute. Add vegetables and beef and mix together. Make a well in the middle of the wok and add the sauce ingredients. Add cornstarch, stirring to thicken. Mix sauce together with other ingredients.  Serve hot.- m# s3 d  o* P( H

Variations
. h5 b. v0 Y/ c' I*Add carrots and onion if desired. Boil in the wok with the broccoli (you'll need to add more water).
