Beef with Broccoli

Beef with Broccoli

Ingredients:
" B0 x6 x$ Z0 E# Z2 t9 T3/4 lb (375 g) lean beef, sliced thinly into bite-sized pieces, w  p. g; O6 q8 n* `- y6 h

4 O. J6 L/ B  p& @8 L$ @Marinade for Beef:

1/3 tsp (1.5 mL) salt! d! g$ c0 \. t& l, X
1 Tbsp (15 mL) cooking wine* Q: I! n4 R- }& S1 U' J
1 Tbsp (15 mL) cornstarch4 B2 a9 G4 `% U* L: c) Q
2 Tbsp water
+ \1 X$ ]4 I1 Y# D" \4 r* [
2 k. [1 u0 k5 M8 R$ b1 1/2 Tbsp (20 mL) oil8 u/ l3 u. c( K8 `

1 1/2 lb (750 g) broccoli, flowerets removed, slice on the diagonal into thin slices! x  z  E; g0 G% Q, R" d
1 cup (250 mL) cooking oil
8 R' l6 ~0 {1 x5 v- P6 l2 1/2 Tbsp (30 mL) oyster sauce  G5 X3 T+ w5 E/ L4 {& f8 P) E
2 Tbsp (25 mL) light soy sauce
  |( A% J% t1 i0 R+ F! \1 W3/4 Tbsp (10 mL) dark soy sauce  d+ {2 |; K" ^' H
1 Tbsp (15 mL) sugar
) U! x! i0 c5 T! Ga few drops of sesame oil9 z  O; z% }& z, M
2 cloves garlic, crushed7 {' C7 z: o' t$ M  }8 E
1/2 cup (125 mL) chicken broth8 u# }% S- v% }8 N% H
2 Tbsp cornstarch (if desired)- y6 m2 m  j+ F" x9 L
. p. ?6 ^* }7 w  m. N3 P8 \! w& A
Directions:$ d9 h  p8 P5 }& ~
Slice beef and mix together marinade ingredients. Add marinade to beef and marinate for thirty minutes. Add 1 1/2 tablespoons of oil to beef, mix in thoroughly, and marinate beef for another thirty minutes. While beef is marinating, prepare the vegetables.
1 ~0 E* n+ f0 I1 l" xHeat wok and add 1 cup of oil. When oil is ready, add beef and stir-fry until it is nearly cooked. Remove beef and set aside on a plate. Drain the wok and wipe clean with a paper towel.7 U! B# f( Z4 D2 b
Add 1/2 cup water to wok. Bring the water to a boil and add the broccoli. Cover and cook until broccoli is cooked through. Drain the wok.  + A" O5 G3 {) @2 |0 m; {
Heat wok and add oil (about 2 tablespoons). Add the garlic and stir-fry for about 1 minute. Add vegetables and beef and mix together. Make a well in the middle of the wok and add the sauce ingredients. Add cornstarch, stirring to thicken. Mix sauce together with other ingredients.  Serve hot.

*Add carrots and onion if desired. Boil in the wok with the broccoli (you'll need to add more water).
