Beef with Broccoli

3/4 lb (375 g) lean beef, sliced thinly into bite-sized pieces7 a1 }+ y. Y2 H

1 egg
$ Y2 `5 P. |. ^, O" d8 D1/3 tsp (1.5 mL) salt$ `6 K; ]' |' V: M
1 Tbsp (15 mL) cooking wine7 K, b* M, x+ A3 T( z, D1 i! ?
1 Tbsp (15 mL) cornstarch. I( }/ w3 \" D, C1 z9 ~0 ~
2 Tbsp water1 Z+ I( L2 j$ _- ~) M% }

4 B2 b/ K2 Z0 e: s1 1/2 Tbsp (20 mL) oil

) L/ F3 L2 J. V# f; [# O% H& s1 1/2 lb (750 g) broccoli, flowerets removed, slice on the diagonal into thin slices
9 q: S8 R0 k) K" I1 g1 d3 D$ v1 cup (250 mL) cooking oil: N' q( G  X& |3 r* A
2 1/2 Tbsp (30 mL) oyster sauce
  O2 ~9 P  ^; v7 R2 i- c2 Tbsp (25 mL) light soy sauce# L* U% u0 L$ p' V
3/4 Tbsp (10 mL) dark soy sauce2 m6 N, E) U7 q) F
1 Tbsp (15 mL) sugar: E5 |+ f" }$ ^9 \- u
a few drops of sesame oil
! ?+ Y* t5 o9 q2 cloves garlic, crushed# z0 K! \" u5 I/ n
1/2 cup (125 mL) chicken broth  d  f' }$ }" b1 j8 [: _* Y
2 Tbsp cornstarch (if desired)

Directions:
# z$ x2 z+ h# e8 [- u' Z; PSlice beef and mix together marinade ingredients. Add marinade to beef and marinate for thirty minutes. Add 1 1/2 tablespoons of oil to beef, mix in thoroughly, and marinate beef for another thirty minutes. While beef is marinating, prepare the vegetables. : }" a9 V9 _$ Q. I% T2 A0 d
Heat wok and add 1 cup of oil. When oil is ready, add beef and stir-fry until it is nearly cooked. Remove beef and set aside on a plate. Drain the wok and wipe clean with a paper towel.0 q) _/ b: Y' J6 ^: w. d
Add 1/2 cup water to wok. Bring the water to a boil and add the broccoli. Cover and cook until broccoli is cooked through. Drain the wok.  
* ]) N  ^8 d5 g6 i8 t/ g' a' n0 eHeat wok and add oil (about 2 tablespoons). Add the garlic and stir-fry for about 1 minute. Add vegetables and beef and mix together. Make a well in the middle of the wok and add the sauce ingredients. Add cornstarch, stirring to thicken. Mix sauce together with other ingredients.  Serve hot.

*Add carrots and onion if desired. Boil in the wok with the broccoli (you'll need to add more water).
