Ingredients

* 2 big halibut steaks
. d, {8 o/ M7 r/ m9 K; e# V * 2 tbsp olive oil8 w, _' ]* P& F
* 1 tbsp butter. n0 ^+ z- h+ g
* 2 cups sliced chanterelle mushrooms
. d# u* u+ o4 Z! p * 1/3 cup diced roasted red pepper8 Y$ l0 o2 l7 O3 L( K& Z/ ^
* 1 cup fresh corn kernels6 ~7 c) \8 h- X/ x3 \
* 1/2 cup water ]7 X6 k2 i7 l. u, [# A5 N

* salt and fresh ground black pepper( P$ o5 B5 X& Q1 h: r
* 1 tbsp minced fresh tarragon

Step 1
, ?( i4 |0 R' F' t# [3 LSlice the chanterelle mushrooms into nice big and thick slices. Add 2 tbsp olive oil in a saute pan over medium heat. Add the mushroom slices and a pinch of salt in the pan. Give it a stir. Cook for 10 minutes or until the mushroom slices are lightly browned.

; g* T+ E1 u1 wAdd 1 cup fresh corn kernels,
8 N \$ A# o5 M" Uand 1/3 cup diced roasted red pepper or 1/2 red bell pepper, and 1/2 cup water in the pan. Bring it to a simmer, and simmer for 5 minutes. Add 1 tbsp butter and the juice of 1 lemon. Give it a mix. Turn the heat to low.

Transfer the mushroom and corn mixture to a serving plate. Spoon over the sauce. Add 1 tbsp minced fresh tarragon.1 O% I' y8 N# ~0 e' p. K# Q1 p
Place the grilled halibut steak on the top, add some lemon cubes beside it, some micro greens on the halibut steak. Enjoy! |
