This grilled halibut steaks features the mild, meaty fish on an earthy, turfy, subtly sweet chanterelle mushroom and corn base.

5 K% q8 c" G# q) X0 r * 2 big halibut steaks
3 [% z, h6 {! t: A4 o8 d7 @; \7 B * 2 tbsp olive oil; k5 y) L. _5 T( Q& ]1 _. q
* 1 tbsp butter
% Y& H c% n# o/ V * 2 cups sliced chanterelle mushrooms
/ s. e4 \: a$ ]: @7 L- Y * 1/3 cup diced roasted red pepper
4 k, l4 i. O+ k, B * 1 cup fresh corn kernels

* 1 lemon, juiced. Y) \( W% ]$ W
* salt and fresh ground black pepper: F7 C3 {5 ^6 J: e
* 1 tbsp minced fresh tarragon4 o7 P1 k. x) O+ ]' ?) z
* micro greens for garnish

Instructions % r0 z |* @1 y* b1 D
Step 1 " b: t0 L* o" }8 Z5 Z
Slice the chanterelle mushrooms into nice big and thick slices. Add 2 tbsp olive oil in a saute pan over medium heat. Add the mushroom slices and a pinch of salt in the pan. Give it a stir. Cook for 10 minutes or until the mushroom slices are lightly browned.

Add 1 cup fresh corn kernels,
* {7 N$ Z8 o0 C- X; R& ?1 iand 1/3 cup diced roasted red pepper or 1/2 red bell pepper, and 1/2 cup water in the pan. Bring it to a simmer, and simmer for 5 minutes. Add 1 tbsp butter and the juice of 1 lemon. Give it a mix. Turn the heat to low.

! r- O0 w) c, u' |8 NSeason the 2 big halibut steaks with salt and pepper. Grill for 4 minutes per side.

% I8 u* D8 {; e+ L. C- o6 `Transfer the mushroom and corn mixture to a serving plate. Spoon over the sauce. Add 1 tbsp minced fresh tarragon.
