This grilled halibut steaks features the mild, meaty fish on an earthy, turfy, subtly sweet chanterelle mushroom and corn base.; P$ K9 G- z8 A1 k( q

Ingredients

* 2 big halibut steaks: `2 d5 ]4 F- F) W
* 2 tbsp olive oil
4 F5 K- o! ^" V; a2 o R. b9 L * 1 tbsp butter
$ }" L" z& ~( l, J; Q) R O$ N4 j * 2 cups sliced chanterelle mushrooms3 A& o- t5 \/ Y5 m
* 1/3 cup diced roasted red pepper
& g1 [) Z8 b& h: k. {- u; w * 1 cup fresh corn kernels
; @* y8 K9 }- w9 ~ * 1/2 cup water) d0 [8 i. L9 f, p
* 1 lemon, juiced
& c# {$ m) D o( ]. n * salt and fresh ground black pepper
. W' r! e; v3 E( ~ * 1 tbsp minced fresh tarragon

Step 1 ! g9 p/ d8 }6 z% x6 w9 ^
Slice the chanterelle mushrooms into nice big and thick slices. Add 2 tbsp olive oil in a saute pan over medium heat. Add the mushroom slices and a pinch of salt in the pan. Give it a stir. Cook for 10 minutes or until the mushroom slices are lightly browned.

Add 1 cup fresh corn kernels,& b5 }! @6 h2 h% o3 p; h
and 1/3 cup diced roasted red pepper or 1/2 red bell pepper, and 1/2 cup water in the pan. Bring it to a simmer, and simmer for 5 minutes. Add 1 tbsp butter and the juice of 1 lemon. Give it a mix. Turn the heat to low. 0 k3 o; o* m: w3 @' X, g
Step 3 9 `- M( O6 J6 R, \6 D4 t
Season the 2 big halibut steaks with salt and pepper. Grill for 4 minutes per side./ r/ i+ G- x' i$ w. z' q, z2 D

: z% n/ M9 m9 \9 vTransfer the mushroom and corn mixture to a serving plate. Spoon over the sauce. Add 1 tbsp minced fresh tarragon.
