烤蛋糕

• 1/2 cup butter

• 1/2 teaspoon vanilla extract (if you like the flavor, otherwise, none)
: X1 w9 t/ x8 w& A6 y- r# n7 a• 1 1/2 cups sifted flour or all purpose flour (former is better)

• 4 eggs, well beaten

Beat butter; gradually add sugar, beating until light and fluffy. Beat in vanilla. Sift together the dry ingredients; add to cream mixture alternately with beaten eggs, beating well after each addition. ' @) m/ e4 ~' A. ]
Turn into greased and floured 8-inch tube pan or 9 x 5 x 3-inch loaf pan.
7 Z- S! Y1 ^5 T: r" yBake in a preheated 350° oven for 45 to 50 minutes. Cool for 5 minutes in the pan then turn out onto a cake rack. Cool and glaze or frost as desired. Store tightly covered./ W: B3 o$ D$ R# P

这是yellow cake,我最喜欢的,又简单。ingredients 我一般比较严格执行,否则变味,但是我通常要把糖的用量减至3/4到2/3,洋人用糖量太大,太甜了。但如果你认为cake mix的甜度适合你的口味,就用上述的量。& C, A! b% y$ B: {) ]
beating,要用mixer, 一般的$10左右的hand mixer 就可以。烤蛋糕,面包,或做土豆泥等都用得上。' M. m7 J& i8 `8 Q1 Y

检查是否烤熟的办法: 用牙签插一下cake中间,若没有什么粘在牙签上就熟了。 |
