Beef with Broccoli

Serves 3 to 4

Ingredients:
, q- q4 K7 D0 U$ _) i3/4 lb (375 g) lean beef, sliced thinly into bite-sized pieces4 ^8 ?* T) v/ t0 Z, ]

- r8 H' M1 W, Y" P3 {; vMarinade for Beef: 4 v" Y# G+ d3 M$ c  y
1 egg
& A' k' }7 x0 e  R% v/ \  ~1/3 tsp (1.5 mL) salt
+ E, ~3 `" q# |# y: c1 Tbsp (15 mL) cooking wine9 y; T" z% `) [* F1 J$ R7 L# g
1 Tbsp (15 mL) cornstarch
; U6 i) H+ U2 f9 c2 v+ [2 Tbsp water+ l: W& s* i6 M. P' U
7 j$ q  w2 e- i$ A/ |1 t6 ]( |$ a
1 1/2 Tbsp (20 mL) oil
2 o$ S  I$ u- C2 r! v
; p2 t& B7 F) T1 |1 1/2 lb (750 g) broccoli, flowerets removed, slice on the diagonal into thin slices
  N- k5 h# G/ @( t9 v# z5 B1 cup (250 mL) cooking oil
0 O/ ^" A6 L* H5 I7 N/ P1 a2 1/2 Tbsp (30 mL) oyster sauce  Y& T. ?! T, p
2 Tbsp (25 mL) light soy sauce
. ~, X5 V  {+ v& ^6 I$ s# ~' ~6 F3/4 Tbsp (10 mL) dark soy sauce
/ l* W) t; m2 Y0 [1 Tbsp (15 mL) sugar
- C0 C' x5 |7 S, G) `6 g% d& p, ^a few drops of sesame oil
! i" _9 X# j) k/ H! |2 cloves garlic, crushed. v8 F0 d3 D$ D% I
1/2 cup (125 mL) chicken broth
4 d$ M8 X5 Z# K+ e5 f0 Y8 P( R2 Tbsp cornstarch (if desired)7 I) ~; O: D  c- R4 z/ r/ {* Q

Directions:
. X+ |) G0 y' a) uSlice beef and mix together marinade ingredients. Add marinade to beef and marinate for thirty minutes. Add 1 1/2 tablespoons of oil to beef, mix in thoroughly, and marinate beef for another thirty minutes. While beef is marinating, prepare the vegetables. $ l$ i, x1 c* V
Heat wok and add 1 cup of oil. When oil is ready, add beef and stir-fry until it is nearly cooked. Remove beef and set aside on a plate. Drain the wok and wipe clean with a paper towel.+ g; W6 v; Q$ |' [) ]
Add 1/2 cup water to wok. Bring the water to a boil and add the broccoli. Cover and cook until broccoli is cooked through. Drain the wok.  8 a5 W6 j: D6 Q# \' [9 ~
Heat wok and add oil (about 2 tablespoons). Add the garlic and stir-fry for about 1 minute. Add vegetables and beef and mix together. Make a well in the middle of the wok and add the sauce ingredients. Add cornstarch, stirring to thicken. Mix sauce together with other ingredients.  Serve hot.

Variations
" P& s. O8 d& q*Add carrots and onion if desired. Boil in the wok with the broccoli (you'll need to add more water).
