Beef with Broccoli

Ingredients:
% [) [. `+ e- f' W: }/ R0 t3/4 lb (375 g) lean beef, sliced thinly into bite-sized pieces$ b( u7 I5 d9 E

Marinade for Beef: ( s: q- l/ o# _: {% T. Y1 n; o5 y
1 egg , }7 r1 M/ @3 k( L# U% C7 k; h+ v& ]' z
1/3 tsp (1.5 mL) salt# |  O" v* g; f& k$ V# Y
1 Tbsp (15 mL) cooking wine
1 o# h2 I5 C* J3 A7 P3 J  B5 Z) O1 Tbsp (15 mL) cornstarch! B$ d/ D& }# X+ g' y
2 Tbsp water
4 Z% r3 D; U/ t, @$ G
2 Z4 E! U. [4 s) l8 ]- `% m1 1/2 Tbsp (20 mL) oil

1 1/2 lb (750 g) broccoli, flowerets removed, slice on the diagonal into thin slices) I4 l" @7 k5 Y5 a
1 cup (250 mL) cooking oil- H  c) J3 n4 p$ E
2 1/2 Tbsp (30 mL) oyster sauce
3 _  R$ i% \+ H0 ^- U; A2 Tbsp (25 mL) light soy sauce
9 X, p' G+ v- {% W' c6 L# w# H3/4 Tbsp (10 mL) dark soy sauce
3 f" I) p5 L* L. D7 Q8 l9 A1 Tbsp (15 mL) sugar) ~' F2 r& s. _: \. D
a few drops of sesame oil$ F% x: W, `7 w. J$ i2 l, X' t" g2 C
2 cloves garlic, crushed* R0 g% V+ h. a" z
1/2 cup (125 mL) chicken broth& E+ O7 }5 E' H7 e1 F! V
2 Tbsp cornstarch (if desired)5 g) g' E. N; T: b. O1 m2 |, l* ~6 W& i

, B# ?# d# I4 l( ~3 k- mSlice beef and mix together marinade ingredients. Add marinade to beef and marinate for thirty minutes. Add 1 1/2 tablespoons of oil to beef, mix in thoroughly, and marinate beef for another thirty minutes. While beef is marinating, prepare the vegetables. . }: c+ K" |8 }' f* u
Heat wok and add 1 cup of oil. When oil is ready, add beef and stir-fry until it is nearly cooked. Remove beef and set aside on a plate. Drain the wok and wipe clean with a paper towel.: S; ]4 U1 V" l, g
Add 1/2 cup water to wok. Bring the water to a boil and add the broccoli. Cover and cook until broccoli is cooked through. Drain the wok.    q+ q& O4 X9 }% _+ M- c2 }+ Y
Heat wok and add oil (about 2 tablespoons). Add the garlic and stir-fry for about 1 minute. Add vegetables and beef and mix together. Make a well in the middle of the wok and add the sauce ingredients. Add cornstarch, stirring to thicken. Mix sauce together with other ingredients.  Serve hot.' O( f$ K0 c, G: J6 A- S

*Add carrots and onion if desired. Boil in the wok with the broccoli (you'll need to add more water).
