No, you don't need HK visa if you have an air ticket to confirm you need to connect in HK and fly to another country. You are even allowed to stay in HK for at most 7 days, if my memory works and the rule has not changed. In addition, no matter in which city in China you start your journey you do not need to pick up your luggages in HK airport, which transfers your luggages to the flight you will take. If Vancouver airport is the first airport you enter Canada, the check-in counter in China should give you the ticker that allows you to pick up your luggages in Vancouver.
