* 2 big halibut steaks f9 b9 p7 T' X( O' q6 s1 ^
* 2 tbsp olive oil- }9 Y* ^9 o/ A% F# h' U# r/ }$ @
* 1 tbsp butter" M+ {. b* U3 _2 d( M7 V
* 2 cups sliced chanterelle mushrooms
& Y$ Q# O* \$ N/ m8 ? * 1/3 cup diced roasted red pepper

* 1/2 cup water& e3 l X+ { B9 q0 z
* 1 lemon, juiced* d3 s1 |) u k; g9 Y9 j

* 1 tbsp minced fresh tarragon

% x0 p/ G# J3 f3 v: CSlice the chanterelle mushrooms into nice big and thick slices. Add 2 tbsp olive oil in a saute pan over medium heat. Add the mushroom slices and a pinch of salt in the pan. Give it a stir. Cook for 10 minutes or until the mushroom slices are lightly browned. ! \" U' B5 h b

' B- `5 r/ N' [. PAdd 1 cup fresh corn kernels,& @% D- ^5 Z+ d2 n( E- E( h. W
and 1/3 cup diced roasted red pepper or 1/2 red bell pepper, and 1/2 cup water in the pan. Bring it to a simmer, and simmer for 5 minutes. Add 1 tbsp butter and the juice of 1 lemon. Give it a mix. Turn the heat to low.

! e ~3 k: c& x* O) R' T/ c2 KSeason the 2 big halibut steaks with salt and pepper. Grill for 4 minutes per side.% l/ S# {6 D- V* z1 K

Transfer the mushroom and corn mixture to a serving plate. Spoon over the sauce. Add 1 tbsp minced fresh tarragon.
