INGREDIENTS:

• 1 1/2 teaspoons baking powder ( D5 T/ |/ k2 K
• 4 eggs, well beaten8 D( W6 X, _6 ]
PREPARATION:9 X+ r/ b- H+ d# i7 R, L1 V
Beat butter; gradually add sugar, beating until light and fluffy. Beat in vanilla. Sift together the dry ingredients; add to cream mixture alternately with beaten eggs, beating well after each addition. : {, ]* G3 j$ Q
Turn into greased and floured 8-inch tube pan or 9 x 5 x 3-inch loaf pan.
7 K2 h5 u- {/ P3 p" a/ I7 |Bake in a preheated 350° oven for 45 to 50 minutes. Cool for 5 minutes in the pan then turn out onto a cake rack. Cool and glaze or frost as desired. Store tightly covered.; h/ I3 A3 i% G. t% V4 T

I normally strictly follow the amount for each ingredient the recipe calls for, except SUGAR( I prefer to cut it to ¾ or 2/3 of the recipe. It is too sweet for some Chinese. But if you like the sweetness of the Cake Mix you got from super market, you can follow the recipe.2 p5 |9 ~. f) t$ p5 D l& C; r3 |+ p1 |8 T

For beating, you can buy a simple Hand Mixer for about $10. It can not only be used for making cakes but also bread, or mashed potatoes(土豆泥)ect. |
