烤蛋糕
INGREDIENTS:

• 1/2 teaspoon vanilla extract (if you like the flavor, otherwise, none), y- B2 b: {. K" n
• 1 1/2 cups sifted flour or all purpose flour (former is better)7 b e, d% c7 N8 W
• 1 1/2 teaspoons baking powder
3 o& s) w) c9 k/ {• 4 eggs, well beaten

# F3 Z$ o3 ~% f* x" d- }7 J' ^* }) o$ xBeat butter; gradually add sugar, beating until light and fluffy. Beat in vanilla. Sift together the dry ingredients; add to cream mixture alternately with beaten eggs, beating well after each addition.
" J2 @8 L4 v4 _- E& P7 nTurn into greased and floured 8-inch tube pan or 9 x 5 x 3-inch loaf pan.
" X2 O9 P/ E# g+ a L7 o5 BBake in a preheated 350° oven for 45 to 50 minutes. Cool for 5 minutes in the pan then turn out onto a cake rack. Cool and glaze or frost as desired. Store tightly covered.2 R0 V& y, V) o k! b) J

这是yellow cake,我最喜欢的,又简单。ingredients 我一般比较严格执行,否则变味,但是我通常要把糖的用量减至3/4到2/3,洋人用糖量太大,太甜了。但如果你认为cake mix的甜度适合你的口味,就用上述的量。3 _. K% G3 @% R$ H0 q
beating,要用mixer, 一般的$10左右的hand mixer 就可以。烤蛋糕,面包,或做土豆泥等都用得上。
